KASHMIRI DUM - ALU


 

INGREDIENTS:

 

small round potatoes   :      1/2 kg.

Green Chillies              :      3 minced.

Fresh   Ginger              :     2 cms minces.

Chill Powder                 :     1 tsp.

Asofedita                      :      1/4 tsp.

Ghee or oil                    :      3 tsp.

Dry Ginger Powder       :      1 tsp.

Cloves                           :      4.

Cummin seeds              :      1 tsp.

Sugar                             :      1 tsp.

Garam masala               :      1 tsp.

 

Salt according to one’s need and oil enough to deep fry the potatoes. 

 

PREPARATIONS


Peel the potatoes, wash well. Take each potaote and prink with a fork . Heat oil in a kadai and deep fry the potatoes till it becomes brown. Keep it aside.

Mix chilli powder, fresh and dry ginger, garam masala, salt and sugar together.

Heat oil or ghee in a kadai and add asofetida, cloves and green chillies. Now, fry the above mixtures (in para two)  all for one minute and pour over the potatoes. Line the base of the pan with a piece of aluminium foi l (no cooking plate.) place the potatoes over it. Pour half cup of water over the potatoes. Cover with another piece of foil and switch on to cooking.
